Once had this in a village outsude of Chiang Mai.

Raw pork, raw pig blood, chilli, herbs (the usual suspects).

Really very nice, sort of like raw Lahb.

Marinate some diced lean mutton in Golden Mountain sauce and coriander, leave it in the fridge for 2 days.

Skewer, bbq, and serve with nam pla prik.

Not as good as Duck tho...

Time to check the old trout...
