Turkey Wings

I'm a big fan of turkey wings, they were almost give away prices for years in Australia and bake/roast really well.

I've had them casseroled as well but they tend to be a bit fatty like that.

I think I'll check out Macro next time I'm there.

Smoked turkey wings are already "cooked". For the most part smoked turkey wings are used as a seasoning for other slow cooked dishes such a collard greens, a pot of beans, or a stew. Slow cooking tenderizes the meat.

 

You could roast a smoked turkey wing but it may be very salty, par boiling for 20-30 minutes will reduce that that somewhat. After boiling for 20-30 minutes, place Turkey wings in a baking dish with a cup of stock from the boil (skim off fat) or no salt added turkey stock. Slice a medium yellow onion, a green bell pepper, a red bell pepper and spread over and around turkey wings. Quarter 2-3 medium potatoes and place around turkey wings. Cover tightly with foil and bake for 30 minutes on 350 or until potatoes or fork tender. Uncover and bake for another 5-10 minutes if potatoes need a little color.
