Wild or farmed is, as always a matter of personal taste. The wild may be a little gamey depending on season,sex and handling. I use some juniper berries to compliment the wild ones. Most native Germans prefer this version.

 

Farmed is safer to eat, milder, perhaps more tender (although the marinade process will even this out) and certainly easier from a prep point of view.

 

Either way.....delicious. :grinyes:
