Pom_Jao_Choo Posted September 18, 2003 Report Share Posted September 18, 2003 All I see at tesco and Carefoure are these often greenish potatoes that look more like "White" potatoes which are generally intended for french fries. Does anyone know where I can find "Russet" potoes alls someomtimes known as "Bakers" or "Idaho's"? If that fails what about some nice red potatoes? Lots of things taste different in Thailand even the oyster pie, and the difference is generally positive. Mostly the issue with the potatoes is a textural one. A visit to the Chef (often a Farang in big hotels) and a compliment about his cuisine should get someone all the info they need, And quite possibly a potato or two. I'll try the Emporium and other consumer options first but may consider the latter if the cravings attack again. No prob's with bothering kitchen staff here, I have a couple years in the kitchen behind me as well as several in serving positions. Though honestly the chefs always seem to fart around all morning, take coffee while the kitchen staff is in the midst of lunch onslaught and then expect everyones help in a last minute mad rush before the dinner crowd arrives.
