Samak, what are agnolotti's? They don't sound familiar at all. I also like black noodles, with squid ink. Preferably served with a (black) squid sauce. Delicious. elef Posted September 5, 2005 Report Share Posted September 5, 2005 Agnolotti (pronounced anneeolottee) are Piemontese stuffed pasta, and come in a great many different varieties, some filled with cheese, others meat, and others still meatless. They are, in any case square and small, about 3/4 of an inch to an inch on a side, and are made using very thin sheets of pasta. They also are often made from cooked meat, in other words, leftovers. As to your recycling comment, most pasta sauces taste better the next day, when all ingredients have soaked in together nicely. Pizza was originally recycled leftovers, wasn't it?
