I've often had fun with whipped cream and various chocolate and fruit sauces. Maple syrup is good but sticky and antipodeans probably know all about Golden syrup. Once or twice I've found that a Hollandaise sauce served well when the lickee was found to exhibit as seafood flavour down below.
