thalenoi
Any one know details about "Khai Kem"? My gf bought a carton box of these a few days ago and offered to bake some this morning. Since I had no idea what for eggs these are, I was horrified when she opened the box: Horrible black stones came out. She washed some of them, after the black stuff it seemed mud underneat, then white eggs. She baked them in lots of oil, they had a red in stead of yellow, what's the name again in english? (Jaune d'oeuf or eigeel) Special taste indeed, arooi.

Coss
Would they be highly sulphurous in flavour? Could they be 1000 year old eggs/ But 1000 year old eggs are normally grey/yellow in the yolk, tea coloured albumen and encased in Horse dung amongts other things. Guest
The Khai Khem should be different from Thousand Year Old Eggs. The Khai Khem are just soaked in salt water for a month and then used as normal eggs. Quite tasty for me at least.

Straycat
Khai Kem = Salty eggs, often duck eggs bathed in salt. Aroi indeed, goes well together with 'khao tom'. You can buy it in all major stores here.
